In this course, we will focus on the fundamentals of making flaky, buttery dough for pies and galettes (free-form pies) and how to bake these flaky creations!
You will learn the process of mixing, rolling, forming, and baking pies and galettes through hands-on and demo-based applications.
Students will get to mix their own flaky dough, form pie shells, and express their creativity through decorative pie crusts. Together, we will bake our flaky creations and enjoy a large savory galette as our pies bake.
Class include recipes, handouts, and light vegetarian refreshments. Pie flavors will be based off local and seasonal selections.

Process of mixing, rolling, shaping flaky dough for pie and galettes
Forming pie shells and crimping styles
Seasonal fillings and toppings
Decorative accents for pie toppings: double-crust pies and lattice pies
